Recent menus have featured Ditchling chicken ballotine with crispy chicken skin, Bosham romanesco, garlic-roasted new potatoes and wholegrain mustard sauce, alongside Sussex pork tenderloin served with salt-baked beetroot, horseradish and apple white bean stew, Savoy cabbage and crispy crackling. South Downs lamb rump is paired with British asparagus, roasted heritage radish, potato cake and fresh mint butter, while beef short rib arrives with wholegrain mustard mash, silverskin onions, lardons and local greens. Seafood lovers can look to whole grilled plaice, served on the bone with buttered cavolo, broad beans, peas, Parmentier potatoes and tempura samphire. For a more leisurely culinary experience, the private TERRA Tasting Room offers five- and seven-course menus, with optional wine pairings.
